Last week, bana-bear and I were invited to a Christmas party hosted by his friend, Steve, and wife, Kim. I loved the stuffed mushrooms prepared by Kim so last night, I made my own version of stuffed mushrooms which bana-bear loved.
This is a very simple recipe. Easy and fast to prepare; most important of all, less carbs.
What You Need:
Mushrooms ( I used crimini and shitaki mushrooms)
Any variety of cheese (cheddar, swiss, etc.) I used our favorite, pepperjack with jalapeno.
How to Make:
Remove stems from mushrooms. Finely chop the stems and some caps and mix with grated cheese and parmesan cheese. Spoon mixture into mushroom caps. Place mushrooms on baking sheet and broil for approximately 5 minutes or until water bubbles from the mushrooms.
